LEAVE for 2 MINUTES
water – 1 l (34 fl oz)
lemon juice – 50 ml (⅕ cup)
lemon peel – 20 g (0.7 oz)
herbs of Provence – 10 g (0.35 oz)
oil – 20 ml (0.7 fl oz)
butter – 10 g (0.35 oz)
salt – 8 g (0.29 oz)
black pepper – 5 g (0.18 oz)

for sauce:
ketchup – 50 g (1.76 oz)
mustard – 30 g (1 oz)
lemon juice – 10 ml (0.34 fl oz)
honey – 30 g (1 oz)
garlic – 3 cloves
OVER LOW FIRE 8 minutes, under lid

for garnish:
mushrooms – 500 g (17.64 oz)
onion – 2 pieces
carrot – 1 piece
garlic – 2 cloves
vinegar – 10 ml (0.34 fl oz)
oil – 30 ml (1 fl oz)
salt – 10 g (0.35 oz)
sugar – 6 g (0.21 oz)
black peppercorns – 5 g (0.18 oz)
bay leaf – 3 pieces
dried dill – 10 g (0.35 oz)
OVER LOW FIRE 10 minutes, under lid
