water – 3 l (0.78 gallon)
salt – 10 g (0.35 oz)
black peppercorns – 10 g (0.35 oz)
bay leaves – 3 pieces
garlic – 3 cloves
herbs of Provence – 10 g (0.35 oz)
TO BOIL OVER MEDIUM FIRE 15 minutes
oil – 100 ml (3.4 fl oz)
mustard 25 g (0.9 oz)
herbs of Provence – 7 g (0.25 oz)
potatoes – 500 g (17.64 oz)
onion – 2 pieces
carrot – 1 piece
sweet paprika – 1 piece
oil – 30 ml (1 fl oz)
salt – 5 g (0.18 oz)
black pepper – 3 g (0.11 oz)
Tray size 35 X 25 cm (14 x 10 in)
IN THE OVEN 180 °C (356 °F)/1 HOUR
for the sauce:
butter – 20 g (0.7 oz)
garlic – 15 g (½ oz)
white wine – 100 ml (3.4 fl oz)
sweet cooking cream – 200 ml (6.76 fl oz)
lemon juice – 20 ml (0.7 fl oz)
salt – 5 g (0.18 oz)
black pepper – 3 g (0.11 oz)
